I just made my batch and very nice 👍🏻 After 2 hours Low Pressure in instant pot, I also feel like yet to the texture that I want, so I gave a try to both slow cook and sauté then I get to where I want! So nurturing and yummy, saving tonnes of money too 😆 My ratio: 600 g Crystal sugar 6 lemon 30 g 陳皮 (五年)
ONLY the Chinese is good with all these cooling drinks...but please provide English details translation recipe for the ingredients...the rest of making n cooking process. This knowledge can b obtained by following the video...thanks

剛試做了⋯⋯跟足閣下的份量比例;比較酸、比較苦!建議糖應該要多一點,果皮太多;減三分一甚至一半都可以!

一煲糖水,加一块果皮已经有味有功效。尤其是30年以上陈皮,就算炖膏都不需要太多的,浪费。我估计妳这堆柠檬,5片已经够了。我会改用传统电子瓦煲煮,就是slow cooker,一来是瓦體而非金属,二来熬膏时水份要挥发,要定时查看状态。如果熬得够浓稠,可以温热时再混入蜂蜜。

可以用玻璃樽,也可以用燉盅者,更可以用電子瓦煲也可。
只是用檸檬是不可以,但呢個是冰糖份量很高的,是甜的。
川貝要磨粉,不是成粒煮㗎!
因為是慢煮,所以不用磨粉它也會溶入

有傳不鏽鋼鍋不能煮酸性食物和中藥,香港營養師學會(HKNS)認可營養師李杏榆(Annie)表示,酸性食物不宜長時間存放在活性(reactive)物料,如鋁、鑄鐵鍋、銅,因為酸性容易令表面塗層受到破壞,惟放在非活性(non reactive)的不鏽鋼鍋裡烹煮是適合的。至於中藥,因為烹煮的時間一般較長,但不鏽鋼鍋傳熱速度快,可能令藥性未能充分滲透出來,或容易揮發掉,因而建議用傳熱溫度較平均的瓦鍋來煲煮中藥。
再者,請看看我的食譜,檸檬和糖的比例就知道這是syrup類甜的東西,不是強酸的東西。而且有兩個煮法,不喜歡可以用玻璃樽煮。
