That's literally what Morelull and Shiinotic do. Yes, in the real world, evolution goes for whatever works and multiple species can do similar things, but in Pokémon, one creature ripping off another's shtick verbatim might make some fans cry foul (or "Game Freak's running out of ideas!").

Earlier today, I've read that the Grass/Psychic type Exeggcute may have been _partially_ inspired by the bird's nest fungus, a type of bowl-shaped fungus which sporocarp resembles a nest containing a cluster of eggs. This is of course not its _primary_ inspiration, since Exeggcute is said to be a cluster of seeds and evolves into a coconut tree, which aren't fungi at all, but hey, Nacli is primarily based on salt rock... The mushroom wizard 'mon still work as a Psychic mushroom Pokémon that is still clearly inspired by a mushroom, though.
You know, I love when fakemon creators acknowledge now only the cannon Pokémon world, but the Fakemon regions that fill in the parts of the world that Pokemon hasn’t gotten to yet.

That cool because in my Fakemon region, I have a Ground type Mushroom that evolves into a Ground/Fairy Gnome Pokemon. It’s a reference to Gnome’s affiliation with mushrooms

Based on Bird Keeper Toby 's Theory that Plant Pokémon are Land Echinoderms, as well as the ancestors of Fairies, what if Fairies (Ralts line, Flabebe line, Hatenna line, Impdimp line, Charcadet line, etc.), were descended from Fungi Pokémon instead? It would make them closer to the Animalia Kingdom, and giving them their own identity instead of being Plant clones, and imagine if there was a Fungi Type as well :'v

This is such a great idea it gave me an idea, you could do pokemon of every dog race like animal or cat like animal, fish, its just infinite. Every one of those and you can do each for every type or land scape style or inspireret by country's myths or traditions. Like 10 pokemon inspired from Denmark. But I guess thats the whole point of pokemon.
