David and I are not true foodies, but we love great food nonetheless, & this very traditional food is one we had to share with you! Imagine, slow cooking a fantastic meat in a pit surrounded by Maguey (Agave) leaves with an incredible consome steaming it all with amazing flavours! This is the story of a young couple who decided to open a restaurant and serve the most amazing Mexican Barbacoa in the Huatulco area. Daniel & Mariana show us how to make this authentic lamb Barbacoa in a fire pit, they share with us the history of Barbacoa that was made by the Tlaxcalans, their own journey to being entrepreneurs & they serve us the most delicious chilaquiles borrachos (Drunk Chilaquiles) & taco at their restaurant called La Barbacoa del Info. Looks like a very interesting place, thanks for sharing. I love the rainy season in Huatulco, learned the hardway that when I feel the first drops it's time to look for cover and have a drink or two. Mixie road by the canal went from bone dry to ankle deep in a couple minutes. The night time lightning storms from the roof top of the Cala are a trip highlight every October.

@@KristinaandDavid It's all good until they start moving boats out of the marina. I'd love to see what's what around Salina Cruz, if they can pull off the planned train corridor to move freight from the Gulf to the Pacific it's going to be a game changer. If that is good or bad is still up for debate. The wife and I are a month out from heading down for five weeks after a brief stop in PV, can't wait.
It will be interesting if they can pull off that shipping corridor via trains. Be a lot of money for Mexico. When do you arrive back in Huatulco?
@@KristinaandDavid We always try to arrive before Día de los Muertos, so this year Oct 26th. Flights options from Oregon suck this time of year to HUX so going to try a new route down. Non-stop to Puerto Vallarta then bounce to HUX a couple days later. I mean why not since we haven't been to PV before? Its got to be better than a 18 hour slog down. My hope is the train will bring in additional business travel and flights down the road making for more options. Nice mix of topics on the channel so far, BTW.

Yes! Now, be aware, not everyone who makes Barbacoa makes it out of lamb, but Dani at Barbacoa Del Info definitely does make it the traditional way, out of lamb.
