Spicy Fermented Pork Belly ផ្អកសាច់ជ្រូកបីជានហិល🌶

  • 5 lbs of pork belly
    4 1/2 Tbsp of sea salt
    Leave in the jar for 5-7 days
    2-3 Tbsp of fresh ground galangal
    4-5 Tbsp of roast rice powder
    3/4 Tbsp of white sugar
    Fresh ground chili 🌶
    Leave it for a week or so at room temperature
    You can fry or grill this and the taste is savory salt sour spicy
    Opt out chili if you want the authentic regular fermented pork belly.
    You can make it with beef with the same amount of salt .

    When you put it back into the jar. Do you clean the jar or put it in a new one? Or use the old juice from the original fermenting

      You don’t have to clean the jar just pour it out then mixed with what it’s show in the video and put it back into the jar. If you clean the jar make sure it wipe dry before you put it back.

    Is it ok to just combine everything and let it ferment for 7 days?

      No it will not ferment the right way. It will be mold and smell porky

    Mine didnt turn red after 6 days. Is it because i added way too much salt?

      Sea salt you have to add. Not the regular salt . It’s ok if it didn’t turn red.

    Sis I did like you said but now I see some molding on the top of the meat is that bad now??

      The molding causes from the jar that is not sealed tight and yes it’s fine just remove the mold . If you take a look a few meat to the bottom nothing is mold.

      @@Thearaspicykitchen thanks sis..just the top parts are a bit moldy. Bottom parts are nice and red in color. Today is the 6th day its ready for the next ingredients.

      You don’t have to put if you don’t like it spicy. Just galangal and roasted rice is enough

    how long can you keep this for?

      Once it’s fermented sour then you can refrigerated. I never keep it forever but longer than 6 months.
