Theoretically, could I grout the joints first then come back to fill the voids afterwards?

I'm surprised you didn't tile the floor before installing the kitchen. That would have made for an easier job.

Are you using sanded or non sanded grout? Im in AZ and am doing a shower with the same tile as you except with eight inch grout joints

I think you must mean 8mm joints otherwise it would be a grouted shower, rather than a tiled one!😅
