I’ve got a Canon 700D, but I have access to a Canon 6D ii, needless to say the images coming out of the 6D are waaaay waaaay better even when using the same lens.
If the bodies didn’t matter, then there wouldn’t be such a wide range of cameras available.

Apologies if this is a poorly worded question; currently i have a canon eos 200D, i plan to upgrade when i can afford it, however i keep switching my mind between either canon 7D or trying out a sony as over the years ive noticed in zoos (as i do animal photography and practicing videos/cinematography) i've been seeing more and more sonys over canons. Basically the question is should i stick with canon or experience a sony?
Depends on how committed you are Lens wise. But even then I think u can get adapters if u get a Sony. I’ve got a Fuji XT3, but I’d honestly go with the Sony if ur set on that. Mirrorless cameras are kinda OP nowadays compared to DLSRs. Canon does make mirrorless though, so something to take into consideration. It all comes down to how you shoot

3:00 ..that Nikon image "feels" a HUNDRED times better than the sony image.. It looks like real life versus computer generated image
just saying, some cameras (Canons, Fujis, Olympus and what not), they all take wonderful JPEGs that have the same picture quality as the RAW file. They will just have way less data if you want to edit the image afterwards.
For my part, I use a Fujifilm body, and 80% of the shots I take, I use a film simulation to do the editing for me, in camera. That's really useful, especially for beginners who are completely lost in any editing software.
I do edit some of the shots however, and for those one I configured a custom button on my camera to add the RAW file to the JPEG, for the next photo. Basically, if what I see on the view finder isn't good enough for what I want, I press that button, and get a RAW file for me to edit when I get home.
(Also, that helps not filling the god damn SD card too quick, I only have 1 card slot, and most of my SD cards are lik 4 to 8GB... yeah...)
