I hope your mom gets better soon! You're such a great cook at least you're able to modify and eat what you need to help yourself. I love your little cat with the Street Lamp night light on your kitchen Shelf. That's so cute!
For less acidic coffee, make a batch of homemade cold brew coffee. Cold brewing coffee in cold water (instead of hot water like normal) reduces the acid levels of the final drink as much as 66%. Once you've brewed the concentrate, you can still cut it with hot water to enjoy a hot mug like normal.
Our health food specialty stores in the US carry something called "Dandy Blend," which is an herbal coffee replacement. It's made with Dandelion and chicory root, which sounds strange but it really tastes so similar to coffee without any of the negatives of coffee. Thought I'd mention it if you can access finding it there! They come in stick packets like Maxim does.
When you're feeling better can you give a tour of the rest of your house? I was curious what the rest of it looks like with all your pastels in your kitchen. Do you have a garden or a yard? Where you can grow things? Not sure exactly where you live and your climate for gardening
Try "Fromage blanc" to help you with your GERD. It's not cream cheese. The product is from France. I don't know if you'll find this dairy product easily in your country.
Try drinking organic light roasted coffee. Also…frying foods in oil, is not good for a person. Instead….look into using an air fryer. Try eating more organic foods. And also stay away from processed foods.
I've never heard for truth coffee is bad for you. But, get whole beans only and organic. Now, all seed oils are bad for you. I'm sorry hi from Wisconsin USA😊

Please stop using plastic containers, especially to warm up food ! Very dangerous for your health. Use glass containers
