Because butter is cooked to make ghee, and it can't be reversed

@@creativevinita thank you for being polite but actually Newton's law in valid only in mechanics and here the point is of chemistry, there's something called chemical change, like cooking rice from raw rice, making curd from milk, similar is making ghee from butter, the process can't be reversed, you can meet a similar texture but not same taste, if you don't believe me open a 7 or 8th standard chemistry book
