She does swim! The tub get filled with water in the evening/off hours for her to swim freely but she doesn't go into the water or her "resting area" while she works unless she needs to use the bathroom. Of course, logistics would make it impossible to have a capy be dried off every time while attending her guests. The capys are put in a rotation at the cafe and are sent to live in a separate sanctuary that is definitely more spacious, had more swimming area, and full of other capys to socialize with when they're not at the cafe. The cafe itself even has a balcony for the capy to use during warmer weather too! They have an Instagram where you can see more details on how the cats and Capy are doing.
Capybaras are semi aquatic creatures, they need a water enclosure. Can you let the cafe business owner know this? Without one, it is detrimental towards the capybara's health.
I just responded to an earlier comment about this concern. The capybara does get to swim and has a tub of water to do it in- just not when it's working.
I hope the capy has a place to swim or else he'll be very sad
