This Easy Chili Cheese Recipe is a Winner | Ema Datshi | Vegetarian

  • Ema datshi is often recognized as a national dish of Bhutan. It consists of different varieties of chilies (dried or fresh), as well as a melting cheese of your choice.
    In order to reduce the spiciness of our Ema Datshi a bit, we mixed in a bell pepper, which added a pleasant sweetness to the dish.
    Give our Ema Datshi recipe a go and enjoy!
    INGREDIENTS
    - medium green chili peppers [3.5 oz / 100 g]
    - yellow bell pepper [1 big size / 200 g]
    - 1 small green chili pepper
    - red onion [2.5 oz / 70 g]
    - 3 garlic cloves
    - tomato [2.5 oz / 70 g]
    - melting cheese, e.g. young Gouda [3 oz / 90 g]
    - butter [1 tbsp / 15 g]
    - water [1 cup / 250 ml]
    - vegetable oil [0.5 tbsp]
    - salt to taste
    METHOD
    1. Wash and prep the veggies: Remove the stalks of the green chili peppers, cut them lengthwise and place them in the pan. No need to deseed them. Chop up and add the small green chili, too
    2. Deseed the bell pepper and remove its membranes, before cutting it lengthwise and transfering into the pan
    3. Cube and add the tomato and follow up with slicing the red onion. Spread the onion slices over the other ingredients
    4. Thinly slice up the garlic cloves, and add them into the mix, too
    5. Grate the cheese and set aside
    6. Place the pan over medium heat, add a cup of hot water and evenly distribute the veggies
    7. Sprinkle some salt on top as well as a bit of vegetable oil, before covering with a lid and letting cook for 15 minutes
    8. Add the butter on top and turn off the heat
    9. Evenly spread the grated cheese over the veggies and cover again for 2-3 minutes. The heat of the dish will melt it just enough, without curdling it
    10. Once the cheese is melted give everything a good mix and combine the cheese with the remaining liquid, creating a tasty base for your Ema Datshi
    11. Serve your Ema Datshi wet or dry. You might wanna serve it more like a soup or enjoy it dry on a bed of rice, with will significantly lower the heat level of your Ema Datshi.
