This vegetarian bolognese is excellent for an everyday family dinner. It can be made in just over 30 minutes with simple, affordable ingredients.
It’s a quick, rich, and tasty mushroom bolognese that goes perfectly with spaghetti or fettuccine, on top of polenta, or in lasagna
⭐️ Ingredients
2 tablespoons (30 grams) extra virgin olive oil
1 large onion
1 large carrot
1 large stalk of celery
2 cloves garlic
1 sprig of rosemary or thyme
2 bay leaves or sage
⅓ cup (90 grams) tomato paste, the thick one that comes in a tube
2 pounds (900 grams) mushrooms white button, cremini, or mixed mushrooms
1½ teaspoon salt or more to taste
¼ teaspoon black pepper
SERVE WITH
1 pound (450 grams) pasta
½ cup (50 grams) parmesan cheese grated or dairy-free cheese
1 handful flat-leaf parsley chopped, or basil

That looks delicious! I'm not a vegetarian, but I'm trying to learn so I can incorporate more vegetarian/vegan meals into my family diet.
With the later in mind, can someone explain me if this dish has enough protein by itself or should it be complemented by an aditional protein sidedish?

Can we use oyster mushrooms too? It’s the only type of mushroom that I eat :(
Yes you can certainly use oyster mushrooms, just be mindful that they have a more intense flavor compared to white mushrooms - so you might wanna reduce the amount of salt 👌

The reason I sometimes buy ingredients and the put off the cooking for days is because when I think about all the chopping i have to do i get lazy. There's no chopping here yet so many veggies go into the dish. Brilliant!
