because it is not common even in China, i loved it but cannot get it even if i am willing to pay a lot for it since i lived outside China. one of the requirements for the best stinky tofu is that it must be served piping hot. the best version can stink up the whole street, i found it at a small pushcart a few back street off the main street in Taiwan. the smell led me to it. still, the taste is something one can never forget. i ate the best more than 30 years ago and even now, when i remember it, i salivate. i do go to Hong Kong, Taiwan and China from time to time but mostly can find the watered-down version. basically, the more fermented it is, the better it tasted.
