    This is fantastic. Thank you for showing this. we added a homemade spicy ketchup to our menu and no matter how many times I try the recipe my boss gives me, it always comes out as a watery tomato sauce with spice. Its pretty awful and has a ton of ingredients and a long cook time. This should be much simpler and i can season it how i need to easily.

    As far as relaying information, this format of video is good, but I kind of prefer the "show, don't tell" method you guys use in most of your other videos. Thats what I think separates chefsteps from others. Then again, I never actually cook anything but I've always found this channel to be pretty relaxing haha

    Are the cooking properties of corn syrup and glucose syrup the same? Like can I just use corn syrup?

    is there something i can use as an alternative to glucose? can't seem to find it in stores. if its used for texture, could it be replaced by another syrupy sweetener? eg honey/syrup?

    ChefSteps Again, you peeps produced a great video. This has to be one of the best recipes I've seen for homemade ketchup. Would subbing glucose for agave nectar and the xanthan gum for ground flax or chia seeds be a total waste of time?

      @@Aizuboy Agave is an inverted sugar so it would be much sweeter then the glucose so no. You could use corn syrup tho

    0.8g of cloves is about how many cloves? I don't have a good scale to measue small amounts like that.

      CoasterNinja I wonder about their recipes and how specific they get:- Did they make this with 0.7g of cloves, taste it and say "That's terrible."
      - Then they made it with 0.9g of cloves and said "Ugh! Still not right."
      - Then they tried 0.8g and decided "Money! That's it right there."
      I just wonder how they get on such a specific number each time. Not 1g. Not 0.5g, but 0.8g.

      Tegan Lov vinegar and all the sugar and salt are preservatives. will last a long time, and doesn't need to be chilled, room temperature is fine

      Tomato sauce is basically pureed tomatoes. The tomato paste is concentrated sauce, which is why he adds some water to thin it out. He then adds the glucose for body/texture/some sweetness.
      Ketchup is the sauce that's created by adding all the ingredients and spices.

      Ketchup IS a tomato sauce. So is marinara. There are many tomato sauces; what differentiates them is what goes into them, how they are prepared (cooked or not, etc.), and what the intended use is. The French sauce tomat, one of the five mother sauces, is a cooked tomato sauce; here's one version: culinaryarts.about.com/od/sauces/r/classictomato.htm

      Yes, it's one of the sugars; you can tell by the -ose ending. Table sugar is sucrose, fruit sugar is fructose, malt sugar is maltose, etc. Glucose is also known as grape sugar (and, medically, as blood sugar), and in the USA it is most-commonly made from corn starch. It's about 75% as sweet as table sugar.
