⬇️⬇️English recipe follows⬇️⬇️ 炒豆秘訣 甜豆炒肉條 材料: 甜豆1斤 急凍梅頭豬扒3件 薑10片 薑汁20毫升 乾蔥頭5粒 蒜頭6粒 辣椒仔2隻 處理: 1. 豬扒,清水解凍。 2. 豬扒解凍後,倒清水分,加入粗鹽1湯匙,乸15分鐘,去除雪味、腥味,及加入少許鹹味,清水沖洗乾淨。 3. 甜豆,兩端搣去椗,連同根部一同除去,清水洗乾淨,擎乾水。 4. 豬扒,清水洗乾淨,擎乾水,廚紙索乾,切粗條。 5. 薑,去皮,切片。 6. 乾蔥頭,去皮。 7. 蒜頭,去皮。 8. 辣椒仔,切粒。 9. 豬扒調味: a. 生粉1湯匙 b. 薑汁1茶匙 c. 生抽1湯匙 d. 胡椒粉少許 e. 雞粉1茶匙 撈勻,醃15分鐘。 烹調: 1. 大火煲滾1鑊水。 2. 在鑊內加入粗鹽1茶匙及油1湯匙,放甜豆灼3分鐘,擎乾水。 3. 大火在鑊內燒熱油1湯匙。 4. 加入薑片、蒜頭及乾蔥頭,爆香,推向鑊邊。 5. 加入豬扒,轉中慢火煎香3分鐘。 6. 豬扒,一面已煎了3分鐘,反轉繼續煎。 7. 豬扒,又煎了3分鐘,轉大火。 8. 甜豆,放鑊內,炒2分鐘。 9. 完成,上碟,灑上辣椒粒。 10. 可享用。 Stir frying shredded pork with sweet peas Ingredients: Sweet peas 1 catty Frozen pork chop 3 pcs Ginger 10 slices Ginger juice 20ml Shallots 5 Nos. Garlics 6 Nos. Chili 2 Nos. Preparation: 1. Pork chop, defrost in tap water. 2. Pork has been defrosted, pour away water. Season with 1 tbsp of cooking salt, to remove unpleasant smells and add some salty tastes to them. Rinse thoroughly. 3. The peas, remove anchors at both ends. Rinse with tap water. Drain. 4. The pork, rinse thoroughly. Drain. Dry with kitchen towels. Thickly shredded. 5. Ginger, get it peeled and sliced. 6. Shallots, get them peeled. 7. Garlics, get them peeled. 8. Chili, dice in cubes. 9. Season the pork: a. Tapioca starch 1 tbsp b. Ginger juice 1 tsp c. Light soya sauce 1 tbsp d. Pepper little e. Chicken powder 1 tsp Mix well. Season for 15 minutes. Steps: 1. Heat up a wok of water at high flame. 2. Add in 1 tsp of cooking salt and 1 tbsp of oil in the wok. Put the peas in the wok, and soak for 3 minutes. Drain. 3. Heat up 1 tbsp of oil at high flame in wok. 4. Add in ginger, garlics and shallots, fry well. Push them to edge of the wok. 5. Add in the pork. Turn to medium-low flame, and fry for 3 minutes. 6. The pork, one side has been fried for 3 minutes, flip over and continue frying. 7. The pork, has been fried for another 3 minutes, turn to high flame. 8. 炒豆秘訣
甜豆炒肉條
材料:
甜豆1斤
急凍梅頭豬扒3件
薑10片
薑汁20毫升
乾蔥頭5粒
蒜頭6粒
辣椒仔2隻
處理:
1. 豬扒,清水解凍。
2. 豬扒解凍後,倒清水分,加入粗鹽1湯匙,乸15分鐘,去除雪味、腥味,及加入少許鹹味,清水沖洗乾淨。
3. 甜豆,兩端搣去椗,連同根部一同除去,清水洗乾淨,擎乾水。
4. 豬扒,清水洗乾淨,擎乾水,廚紙索乾,切粗條。
5. 薑,去皮,切片。
6. 乾蔥頭,去皮。
7. 蒜頭,去皮。
8. 辣椒仔,切粒。
9. 豬扒調味:
a. 生粉1湯匙
b. 薑汁1茶匙
c. 生抽1湯匙
d. 胡椒粉少許
e. 雞粉1茶匙
撈勻,醃15分鐘。
烹調:
1. 大火煲滾1鑊水。
2. 在鑊內加入粗鹽1茶匙及油1湯匙,放甜豆灼3分鐘,擎乾水。
3. 大火在鑊內燒熱油1湯匙。
4. 加入薑片、蒜頭及乾蔥頭,爆香,推向鑊邊。
5. 加入豬扒,轉中慢火煎香3分鐘。
6. 豬扒,一面已煎了3分鐘,反轉繼續煎。
7. 豬扒,又煎了3分鐘,轉大火。
8. 甜豆,放鑊內,炒2分鐘。
9. 完成,上碟,灑上辣椒粒。
10. 可享用。

Ingredients:
Sweet peas 1 catty
Frozen pork chop 3 pcs
Ginger 10 slices
Ginger juice 20ml
Shallots 5 Nos.
Garlics 6 Nos.
Chili 2 Nos.
Preparation:
1. Pork chop, defrost in tap water.
2. Pork has been defrosted, pour away water. Season with 1 tbsp of cooking salt, to remove unpleasant smells and add some salty tastes to them. Rinse thoroughly.
3. The peas, remove anchors at both ends. Rinse with tap water. Drain.
4. The pork, rinse thoroughly. Drain. Dry with kitchen towels. Thickly shredded.
5. Ginger, get it peeled and sliced.
6. Shallots, get them peeled.
7. Garlics, get them peeled.
8. Chili, dice in cubes.
9. Season the pork:

7. The pork, has been fried for another 3 minutes, turn to high flame.
8. The peas, put in the wok and fry for 2 minutes.
9. Complete. Put on plate. Put chili cubes on top.
