I saw another video where they actually did a double layer of each. But the process was quicker & less cleanup. They put a layer of Fritos in the baking sheet on the parchment paper, then poured 1/2 of the peanut butter mixture over then sprinkled chocolate chips. Then repeated again.
We always use a sheet of saran, or i suppose wax paper also works to lay over the top of the warm chips and peanut butter and press down with our hands to flatten the chips without getting sticky
Re-setting up too quick, you could always use a bigger pot and pour the corn chips into the warm pan instead of the way you’re doing it. This is sort of like rice crispy squares, same idea.
I made this yesterday. Omg, the corn syrup turns the fritos so hard, and the melted chocolate was all over my hands. It got so hard, i couldnt break it up at all. I had to dump it! Never again, will i try this. Next time, i will just buy some chocolate fudge sauce, and pour it over the corn chips! Problem solved
It looks like a lot of trouble. You could save time by just eating your Fritos with Reese's pb cups. It's like the Reese's Take 5 candy - a Reese's cup with pretzels and peanuts. Those are So good

We used to use Corn Flakes -. Just no salty taste
