I like mine chunky, too. Shredded feels like mush. I put hot sauce in my water when cooking the chicken - gives it a hint of spice but no one knows it. 🙂 Love apples, nuts, grapes, cranberries, celery, etc - depends on what I have on hand. I also occasionally add ranch dressing and/or dijon mustard. It's never boring. Merry Christmas!
You are so blessed to have your family come visit. My sons and their family just expect money from me and my daughter in law thinks it's ok to be a bully to me. Thank God I live a few hours away. Brenda I lost my earring one time and as you didn’t know where that sucker was. To my delight I found it. It was found in my sweater that I had worn about a week before. There it was stuck in my sweater. So think about what you were wearing and check who knows it might be there. Happy New Year to you and yours. We love you sweet lady. God Bless.
Almost 50 years ago when I was in my middle 20s, I had just finished making a batch of cinnamon rolls when i noticed a bandaid missing off my finger. We had people over that night and we were all enjoying the rolls when one guy kept chewing and chewing on something. He pulled it out of his mouth and guess what it was! We all had a good laugh. We were just a bunch of hippies having a good time.😂 His name was Ivan and he didnt even hate me for what just happened. He did hate me later for something else though.
I do put apple in mine and grapes too , everyone loves my chicken salad and ask me to bring it , I do sometimes put nuts in it and cranberries it can feed a crowd and it's healthy ! My secret ingredient is mango chutney , I had real good chicken salad while on vacation and the waiter asked the chef what was in it and he told me and I've been doing it !

Mrs. Brenda, you think like I do. Everybody came in from dressing a deer after Thanksgiving and it was cold so I had a chicken casserole ready. After Christmas they came in late after dressing another one so I had a big stainless bowl like yours of chicken salad. No hot chocolate the second time - too hot. Had sweet tea. ;)

I just took a chicken out of the freezer ! You inspired me, It is a ready cooked from store I bought a few weeks ago..So thaw, cut up , light and dark meat... Thanks for the idea and reminder , great quick idea..
I made chicken salad too Brenda! The best I've ever made! Happy New Year! I chopped my chicken in my little veggie chopper. It worked great! I will use apples next time. I used grapes this time.
This year is the shortest time/days between a Thanksgiving and Christmas. I think it's an 8 or 9 year cycle where the days add, then subtract. The longest amount of days was a couple years back. We had at least another week between the 2 holidays. From now on will get additional days, but next year will be short too.
Brenda, you're great at the cutting board! Cutting up the chicken fast, we saw your trick, to speed it up.😅 Did you cut up the apple as fast? Pecans, apples hot sauce, sweet pickles, , diced sweet onions, red peppers, boiled eggs, cranberries & all are good along w/celery + seedless grapes. I like Ritz crackers or Captain crackers. What kind of mayonnaise do you use? Anyway, I LovYaMuch & glad you found your knife outside & hopefully you'll come across your other earring real soon. I feel the same way Brenda....I put up some of my decorations but I was running out of time....just couldn't seem to have enough time to get it all done for some reason. I've never done apple in my chicken salad....I mostly stick with boiled egg(chopped of course), onion and celery and mayo. That sounds good though. Love ya 🥰
Hi Miss Brenda! We’re having a very mild Winter here in Arizona. Usually snowing by now. ( don’t really miss it though.)😅 Just absolutely Love that apron you have on.❤
Two chicken breasts fit well in a quart freezer bag and you can pop them out of the bag and into boiling water and cook them when the need arises. I get them in family packs and cook some and freeze some for later. I love a crisp apple, grapes and celery, but not in my chicken salad. Just sweet pickle relish, chicken, mayo and maybe some onion chopped fine, salt, pepper and oregano. Oh, and a snack to a growing boy can be a meal to anyone else.
Miss Brenda, I agree, you can put anything in chicken salad and it tastes good. I add celery, green onion and carrot. Then a cup of shredded sharp cheddar. I do equal parts mayonnaise with cream cheese and a packet of dry ranch dressing mixed in. It sure is good! Now I want a sandwich like your grandson. Hope he enjoys!
Love children salad with everything in it. I cook my ham bone left for Christmas, pintos fried potatoes with onion, sour kraft with weiners ,cornbread and peach 🍑 cobbler.
