Ingredients
Topping
⅓ cup butter
1 cup sugar
1 cup flour
Middle
4 cups rhubarb
½ cups sugar
Bottom
1 ½ cups flour
¼ cup sugar
1 egg
¼ cup butter
½ tsp salt
1 tbsp baking powder
½ cup milk
Process
Chop the rhubarb and mix with sugar for the middle layer. Set aside to let “soak”.
Combine dry ingredients of the bottom layer then add wet ingredients and mix.
Once combined drop spoonfuls into a 8x8 greased pan until the bottom of the pan has an even layer.
Combine topping ingredients together and cut with a pastry cutter until mixed.
Pour chopped rhubarb/sugar mix onto the bottom layer.
Sprinkle the combined topping onto the rhubarb.
Set the Oven to 325f and bake for approx. 35 to 55 min or until golden brown
Tips
2. Dough should be the texture of pizza dough, very thick and a bit sticky.
3. Glass is best so that the bottom layer can be watched as it cooks. The goal is to have the top and bottom layers golden brown.
4. If you don’t have a pastry cutter simply use a few knives tucked into your knuckles.
6. Don’t pack the topping down! The loose topping will form a delicious crumble.

Limp stalks of rhubarb with split ends indicates it’s no longer fresh

duo must overcome the years of physical age to find
common ground at the counter in order to create the
