- Today we are preparing another classic dish of Italian cuisine: Stuffed Eggplant 😋

Ingredients:
Small eggplants 6
Minced meat 500 g
Pecorino cheese 4 tbsp
Eggs 1
Garlic 1 clove
Parsley 1 bunch
Stale bread 100 g
Cheese whey 1 glass
Salt and Pepper 1 pinch
Sauce:
Extra virgin olive oil 2 tbsp
Red Onion 1 small
Tomato pulp 500 g
Basil 7 leaves
Salt 1 pinch
Cooking:
180°C or 355°F for 30 + 10 minutes then 180°C or 355°F for 25 minutes + 230°C or 445°F for 10 minutes

This is the most delicious recipe. My grandmother, from Riccia, used to make these. After cutting in half she would steam the eggplant then scoop out the inside to mix with the filling. Otherwise her recipe was identical. Thank you for helping my memory along.

My mother is from the Catanzaro province in Calabria. Her variation of this recipe involves boiling the eggplant halves until the filling is soft instead of baking them. She scoops out the filling as you did being careful to not damage the skin. She then pan fries the beef and the eggplant filling together with olive oil until soft and then mixes all your ingredients in a bowl prior to stuffing and baking. She adds some tomato sauce to the filling as well. She coats the pan with sauce as you did and puts sauce on the eggplants as well. The eggplant does not come out crunchy and tastes great!

Looks delicious, thank you. I make a similar dish but with pumpkins. I find that the pumpkin is easier to scoop out if I rub the cut edge with a bit of oil before baking it.

I have a similar oven to yours, a little tip.... dont have it beside the fridge, the back of the fridge is there
to release heat, and should have space to do so.

@@Spectacular-cuoredicioccolato I wanted to add that when you cut into this dish, I could see that the Aubergine pulp was under cooked. If well done you would have been able to just scoop it. But you didn't hide it. You were honest enough to declare it and advise extra cooking time. This gives your videos and yourself high credibility. Bravo!

This would be a great addition to an Italian buffet for the holidays. Add some pasta with sausage, stuffed shells, fresh bread, wine, done. You could serve 12-15 guests on the cheap.

In Persian cuisine we have a similar dish. The difference is we cook the minced meat before we stuff the eggplants, the result would be much better.

We have a similar recepie in Goa where we stuff mince in capsicums or bell peppers !

I love aubergine and one of my favourites is brushed with garlic olive oil and grilled on the BBQ.

Spray the aubergine with oil before putting in oven.
Bake them on the meat side till brown.
Add some chicken or beef stock,bay leaves and thyme to sauce.
More water and tomato sauce and let them cook in the sauce untill soft and sauce is thick again.

My mother in law used to boil the eggplant and then remove the inside much easier and tastier! Its actually better to use a smaller baby eggplants.

I know nothing about stuffed eggplants .... but, wouldn't it be better to core the eggplant un cooked then cooked the bits on the stove top and add it back to the filling??? That way you wouldn't lose 2 eggplants. Try it that way next time! Bonepetit!!!

That’s how I do it. My ex husband is Italian American, and his family showed me how they do it. Core the eggplant whilst raw, chop up the insides, sauté on stove along with meat and sauce and cheese, then stuff eggplants, cover with more cheese and bake. Inside is already cooked pretty good before going into oven.

You can call it bharwa baigan in Indian language. We do it with most of the vegetables such as tomato, potato, bittergourd, Parwal (I don't know what it's called in English).
