It started in Yuan Dynasty (Mongol ruled dynasty), and so it has many North Asian elements in it. In Qing Dynasty (Manchu ruled dynasty), it is heavily affected by Manchurian language, and after that by many more foreign languages. So it really is more like a creole language, while genetically it is Sinitic or Han.

Not for everyone, of course, but it happens quite often, because we tend to lose some "elasticity": mnemonic, vocal (some kind of singing or some sounds in a language) and so on. Oftentimes when we "learn" someone else's culture it's a "fake" because we aren't in the "right" place/time, we don't have native teachers and so on... It's possible to learn almost everything (even by yourself), but sometimes it's just hard and usually it gets harder
