He agrees and destroys the three journals that his grate uncle Ford made containing all Gravity Fall’s secrets. This is two years after the events of the show when dipper is 15

So ... Okay, so here's my take on your story.
Ford saw Dipper get possessed, knows that you have to make a deal to become possessed. He didn't know of the deal Dipper made in the past thought Dipper did something to release Bill/dabbled in dark magic, and Ford slapped Dipper because he was angry his own kin would do such a thing after everything.
Sorry, I kind of got confused on the reason why Ford would be so angry with Dipper after seeing Dipper unexpectedly get demon powers, or did he not see Bill at all or he did and thought Dipper made a deal with Bill for those powers? Sorry, still a bit confused on that one ... Also BillDip is adorable and Dipper with deer antlers is always cute!
