@@ssiiggyy1980 Good question, I use evaporated milk a lot, it's easy to store...I guess there's one way to find out.
I wished school taught us this instead of useless things this makes me appreciate my old Highschool teacher ☹️ she taught me how to cook bake and sew

So ironic you should post this! I made ricotta cheese for the first time yesterday! I'm never buying it again! My recipe was 8 cups milk heated to 185F, and then 3tblsp vinegar. Stir for two minutes gently, let rest for 20 minutes. Pour into strainer! That was it! I was so impressed with myself haha. I added a bit of cream to it at the end for extra creamy texture. The stuffed shells with bolognese sauce I made was absolutely delicious! I also cooked the shells in the whey liquid, they had a great flavor! I want to do mozzarella next!
I use goat milk from my backyard girls, fresh lemon juice, and pink salt. It is really good. Keep the whey for cooking!

I grew up on a farm, but I'm a city dweller now... I bake my own bread, and make my own cheese and pasta... no, it's not a need, but a hobby, and I appreciate the quality as the experience...
I like to make an Ethiopian cheese with just butter milk. The acids in the buttermilk cause the curd to form when heated to 140. Then just strain the whey.
No whey!
Put an ice cube in your pan before adding the milk. Don't melt it first but just swirl it around. This helps keep the milk from scalding. Use the whey to carbonate 100% juice like grape or cranberry.
I made cheese once. A soft spreadable kind. Needed seasoning. Kind of like a cream cheese.

I make haloumi cheese from organic raw milk. Requires zero ingredients other than the milk and some flaky sea salt (non-iodised) and dried mint to coat cheese once made. Delicious.

I started getting raw milk specifically to start making cheese & butter with. Our cheeses always turn out with a ricotta consistency, even with recipes requiring rennet or vinegar. I don’t get it.
Lemon juice can be used as an alternative to white vinegar or Apple Cider vinegar. Also, whole powdered milk,(like Nido), can be used to make cheese as well. A 56.4oz. container of Nido is a useful product to stock up on.
What are your thoughts on expiration dates for whole dry milk? The packages of dry whole milk I found were due to expire within the year and since I’m hoping to use them in my prepper pantry stash for hopefully years longer but I feel nervous simply because it’s a dairy product and wonder what the true shelf stability would be long past expiration 🤷🏻
@@Mapoflife My wife and I are finishing up a container of powdered whole milk now
that's marked "Best before 21 May 2023" and it's still fine. We just used it to make up some milk yesterday. The container was opened up over a year ago, so I would think that a sealed container should stay usable for a long while.

When the p--demic first hit, my SIL had to temporarily shutter her coffee shop. She had about 20 jugs of whole milk that weren't going to be used in time. She gave away what she could, and made mozzarella cheese with the rest. It was delicious!
Whey is also great for spraying on plants affected by powdery mildew. Do it on a sunny day and, with the sun, it'll destroy the cell structure of the mildew.

You can also use the whey to feed your sour dough starter or use as a brine to ferment vegetables.

Internet has recently been saturated with people falsely calling it mozzarella, but what you can do following your step is to reheat the weigh to about 65°c and then repeatedly heating your curd ball to that temperature, followed by kneading it like bread dough. Once smooth, form and add to the ice bath. (I like to add 2%-3% salt by weight before my last knead). It holds together firmly when cut and wonderful to use on crackers or bread

Thank you for the video! I’ve been learning how to cook with only shelf stable foods. You can also use powdered whole milk to make cream cheese. Add a little honey if you want some sweetness. Yummy!

From what you just dun you can make Roccia and crem cheese to if you use heavy whipping milk you can make Mascarpone.
That is ricotta cheese that's been pressed into a disk and herbs added, if you want to use this for lasagna just add the salt and cream to desired texture
I can't believe how many people know how to make cheese. I may get brave enough to give this a try
This is very similar to Indian paneer. I prefer lemon juice when making it. It is delicious cut into cubes or slices, fried, and added to a curry. Makes a super quick meal added to jarred butter chicken sauce and served with peas, and rice
I was browsing RUclips and this video came up. I almost clicked off it but saw the Summerhill goat milk (one of our staples) and ended up watching the whole thing. I learned to make tofu cheese as a kid, same process exactly. I also learned to make tofu, bread, and a ton of foods from scratch. We even picked, grew, and made almost everything from raw single ingredients. Of note, little known fact: some of us are deathly allergic to parsley. Some people wouldn’t know until they eat it.

If you get a cow or even a mini cow (they exist, and produce only a couple gallons a day), then you can work with the best milk possible. No hormones and if you leave the milk out on the counter overnight it turns into clabber. It doesn’t go bad, has the same texture as yogurt and you can turn it into dream cheese. A cheese similar to cream cheese

I make cottage cheese, raw and it;;s delish
1 gallon raw milk
1 large mason jar
pour milk in clean, sterile jar, use cheesecloth on top, secure with rubber band.
let stand at room temp for 3-4 days

look up vegan cheese recipes online. I made cultured cashew milk mozzarella that was better than the real kind and was easy to make (used probiotic capsule to culture cashew milk). Some recipes were terrible but others divine.
