Yes you can make these honey roasted almonds without sugar! I substituted Apriva (Kroger's brand of Splenda) and it worked well. The nuts did stay a bit stickier, but still very good. I also have used NuNaturals powdered stevia - read the label as you won't need much - and it worked great, too. Snip off bottom leaves and trim the stem on diagonal. Place ends in small cup of water to the base to next leaves. Cover with plastic bag with some holes and leave on counter, not in direct sunlight. Check water everyday. What you’re creating is a micro-greenhouse. Basil from my garden and already full of nutrients. Roots will start sprouting where you took that pair of leaves off. Use the basil as needed. Lasts several weeks. You can pot up the rooted basil in good quality soil.
The recipe at the end calls for mixing the sugar/salt mix coating for the almonds in a separate bowl, not the pan in which the syrup and almonds were cooked. Is one method preferred to another? I like the idea of using less dishes to clean!
@mellymel42 Pay attention; there are 2 tbsp of honey in the coating the nuts are cooked in. Then they are topped with the sugar and salt. That's how it's typically done.
Watched this recipe and 30 minutes later sitting here enjoying the fruits of my brief labor. Very easy, tasty recipe! My only problem now is to figure out how to stop eating them!!

I had made these&they turned out nice.thanks a lot.just wanted ro clear-after adding the sugar&salt mixture&left for drying..the sugar crystals stuck to the almonds (I was thinking the heat will dissolve the sugar crystals! !) .is it supposed to be like that?? (Had used regular white granulated sugar)
Hi, The almonds were DELICIOUS the first time, so I decided to make more right away. I doubled the almonds (4Cups) and double the rest of the ingredients. This time, the almonds were sticky and brown instead of the sugar coating. What did I do wrong?

@AONSproductions Nutritious, not nutritional. Oh wow, sugar is bad for you? What a revelation. If you can't handle it then don't eat it. Most people do fine with an occasional indulgence. You have to live a little, especially around the holidays.

You can use peanut, corn, vegetable, safflower or olive oil. All work well. ~ Rita

And what about canola oil? I don't have any... Can I simply use sunflower oil instead?

I made some using an almost identical recipe, but they're hella oily.
Turns out I used tablespoons of oil rather than teaspoons.
Such is life.
Now, have you got a reference for that information?
