I love seeing people using real pressure cookers. I was an early adopter of electric cookers before InstantPot came along and I gave it away. Quick release by moving the rocker causes the food to rapidly boil and that's not what you want. It messes with the texture of the food, especially soft foods like beans. Thanks for showing people how real pressure cooking is done, it's the only way to do Birria.

At my authentic bodega, they use two tortillas. First one is on the grill and loaded with cheese. Then they put another tortilla on top and fill with the beef. Either way these things are delicious. Serve with a cup of the red broth.

Great cook guys! I love fried or wet tacos, as long as they are beef. They weren't kidding when they said "Nothing satisfies like beef." I saw the new Pit Boss griddles at the local farm store yesterday. They were pretty impressive looking. At least one of them had a non-stick cooking surface. Pit Boss should send you guys three griddles to evaluate. That would make for an awesome video. It would boost your channel and if they're any good it would boost their sales. Getting really close to that 50000 subscriber mark. Cheers!

Mornings Herbert. It's a cut made from the lower part of the leg towards the hoof. you get the bone in the middle and the muscle around it. It is a very very tough cut but,,, it has alot of flavor and collagen. Osso bucco is the same cut but from a bit further up the leg I believe. Thanks for being a sub and for commenting! -N

Birria tacos are awesome. The water sprayed on the produce at the grocery store is actually to add weight so you pay more at the checkout, lol.

@Griddle Guys Nate--Chili freezes so well. Just make a big pot and freeze it in quarts! Perfect. Beef Stew is okay frozen, but chili is fabulous.

you think a vita mix blender would liquify that better? i suggest two things nd you know them. vita mix and insta pot prolly for 30 minutes

Vitamix can still leave a bit of skin, but not much. I'd maybe soak the peppers longer...if I didn't want to strain.
Birria is definitely a labor of love, but it's SO worth it! I thought I was only one that strained the blended mix. Glad I'm not the only one! 🙂
