    Crockpot Pork Butt (Diabetic-Friendly)
    Ingredients:
    3-4 lb pork butt (bone-in or boneless)
    1 onion, sliced
    4 cloves garlic, minced
    1/4 cup apple cider vinegar
    1/2 cup low-sodium chicken broth
    2 tbsp Dijon mustard
    1 tbsp smoked paprika
    1 tsp ground cumin
    1 tsp black pepper
    1 tsp salt (optional or to taste)
    1/2 tsp cayenne pepper (optional for heat)
    1 tbsp olive oil
    1 tbsp fresh lemon juice
    Fresh herbs (optional, for garnish)
    Instructions:
    Prepare the Pork Butt: Pat the pork butt dry and rub it with olive oil. In a small bowl, combine the smoked paprika, ground cumin, black pepper, and salt. Rub this spice mix evenly over the pork.
    Layer the Crockpot: Place the sliced onions and minced garlic at the bottom of the Crockpot. Set the seasoned pork butt on top.
    Add Liquid: Pour in the apple cider vinegar, chicken broth, and lemon juice around the pork.
    Cook: Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the pork is tender and easily shredded with a fork.
