Big Country Bbq Sauce use baking powder and salt 1 to 3 mix and dry brine overnight. Don’t use baking soda it may give a metallic taste from what I read.
take the skin off completely and scrape the underside of hard fat. leave the small layer of gelatin fat and put the skin back on. thinner skin = crispy faster
