    Great straight forward demonstration. If I may suggest if doing this again perhaps mention that the lemon juice is to make it acidic (below 4.6 ph) so suitable for Water Canning. Also how long to Water Bath the tomatoes.

      Thank you for those suggestions. It is hard to give suggestions on how long to boil or process in the canner because altitude makes a difference. But I do have a link in the blog post to find the right time for processing the tomatoes.

    Little tip: peel your tomatoes over a bowl and save ALL the juice that drips off while peeling. Can them in their own juice instead of just water. Makes WAAAAAYYYYYYY better maters

      @barid302 just fill each jar at least 3/4 of the way before adding whatever is leftover to the jars. Definitely wanna make sure all the jars get even juice

    I don't understand the 'processing step at the end where you submerged the filled jars in water. How long? What temp of water? Or am I missing something.

      Depends on your altitude, size of jars. Look for Ball canning with times

      ​@@leeestock7114they're asking about processing times because they simply do not know, it's not "overthinking" to ask for the parameters of a process they've never done before. And btw, it's not 10 min. So you're giving bad advice. It's 40 min for pint, 45 min for quart @sea level to 1000ft. Have some grace, re-read the question, and try not to be so snarky next time.

    The processing part, I have not done that before, is that boiling water you have set the full jars in? and how long do they keep for is there a use by date? sorry I haven't done this before lol What if you don't have a canner, can you use a large pot on the stove?

      The bands are not required for storage. Just for processing.

    I was canning tomatoes yesterday and when I was half way through notice a sore on the base of both my thumbs, what should I do? Should I throw the whole batch away? I didn't javelin any lemon juice in the house to put I to my jars, I had put my jars into the dosh washer to sterilize them , I'd my tomatoes unsafe now do I need to discard the whole batch?😊

      No you can still use them. I peel mine because the peel can get tough after processing them for canning.

    You're a great teacher and did very well with these instructions! However, my wife and I did an exact canning session of tomatoes a couple of years ago and we understand the need to add the lemon juice for the safety of the canned tomatoes however, we were personally shocked that the tomatoes no longer tasted like tomatoes but lemons? We just looked at each other and ask...WHAT are we missing because we considered the canned lemon flavored tomatoes unusable and immediately threw them out and have never canned tomatoes since?

      @@soniad526 depending on where you live in relation to the sea is what she means by altitude so if you live high in the mountains, your time will be different. Tomatoes as you can see here in the video, our water bath, so big pot full of water about 1 inch over the top of the jars and you just boil it a pressure canner has a lid with a pressure gauge and is much different but you do not need for tomatoes

      You can use a normal pot, just make sure to put a rack in the bottom to protect the jars from breakage and be sure to have a couple inches of water above the top of the jars. I hope that helps.

      The tomato skins get really tough while canning, so it's best to remove them first.

      Around my parts, no one uses lemon juice, just some salt. I need to look into this further and see if it's just a being "super ultra-safe" canning idea....considering many people may not be caning correctly.

      I can't give an accurate time to process in a boiling water canner as it varies for different elevations. But you can find a graph here for the length of time you'll need to boil at your elevation, nchfp.uga.edu/how/can/how-do-i-can-tomatoes/whole-or-halved-tomatoes-packed-in-water/

    I have never water bath my tomatoes. I had a little acidic, content , lemon juice, etc. I don’t peel them. I do core them. I do add boiling water and I let them cool. I’ve been doing it this way for years. I don’t understand why people water bath tomatoes.
