Btw Bagya which is actually pronounced BAG-YA is not made from garbanzo beans but Black eyed peas I guess she got confused with Falafel which is made out of garbanzo beans ! Thats what makes the two very different in texture flavor etc
Finally, Nico, you have said it because you have experienced it; Ugandan cultures need to incorporate a bit more spice and herbs into their foods. Ugandan food was the best until I ate Nigerian food and later Kenyan foods when I lived (Githurai 44 -Zimma) . Jamaican food when I relocated there was even more flavorful and aromatic. Then I became an American in Atlanta , it all went South real quick! They have the dullest tasting foods of all time! I think, if we were to add a few spices/ herbs to our cultural dishes … nothing crazy … kitono nyo, wano ne wali, we could elevate our local dishes to another level.

Where did the idea of MKATE wa Nyama, come from? Basically it is a fusion of what the OMANI Arabs brought, which was then 'SPICED UP' by the MUSLIMS migrant workers from Pakistan and India, who settled in Kenya! Badically, this 'Mkate' is derived from the ORIGINAL pizza, which is An ARABIC invention from the Carthage Empire, which pre dates the Roman Empire by 150 years. The ARABS loved their Arabic Version of the 'Mkate ya Nyama', without the scrabbled Egg thrown into it! Therefore, the Arabic Mkate wa Nyama is one WITHOUT Eggs within. First off that Architecture is not Typical Mombasa Architecture, it is Indian architecture (Jodhpur to be more specific). At one point she said Gujrati architecture which is a state in India know for its palaces. Pilaf, Chutney & Samosa are not African cuisine they are Indian influenced. She should at least keep the references truthful. Im Indian and I love African food but, eating the Indian way is not really “eating the African way” They are tour guides, guiding people in the wrong direction.

First off that Architecture is not Typical Mombasa Architecture, it is Indian architecture (Jodhpur to be more specific). At one point she said Gujrati architecture which is a state in India know for its palaces.
Pilaf, Chutney & Samosa are not African cuisine they are Indian influenced. She should at least keep the references truthful.
Im Indian and I love African food but, eating the Indian way is not really “eating the African way”
They are tour guides, guiding people in the wrong direction.
