    As Belgian fries must be naked without the skin( with skin we called that lazy wife fries " luie wijven frieten")

    I will never remove my (fore)skin ... Solanine in the skin actually gives extra nice, bitter, taste and flavor. Poisoning by solanine is very rare. Solanine is partially broken down during cooking, baking and frying :)

      While it is rare, it isn't unheard of either. I prefer to err on the side of caution.

      @@velsen232459 Together with sensitivity, which can vary from individual to individual. Better safe than sorry. In another comment I already wrote, that it normally isn't worth worrying about, there are circumstances in which it is.

    Fries are good no matter how they are prepared. But I share the concern about winter skins and consistency. Push comes to shove, I prefer fries with the skin on, so long as the skin is not overly thick.

    I like either, it's like a pizza to me in that way. Italian or deep dish or regular, I don't care.

    I knew as soon as I heard the word skin, the reference would be made. You guys never fail to deliver 😂.
    For humans definitely with, for frites, depends on my mood, and what the topping is. So for speciaal, oorlog or zuurvlees I would prefer skinless. But for Mayo or Curry with skin is tastier.

    With skin its has more character and flavour. But iff indeed the quality goes bad, then its better without😂

    Fries are good - no matter what, but the skins make it more "rustic" for me (and adds some more taste in my opinion).

    I like those potato wedges with skin (+sour cream); only every now and then they have them at McDonalds.

    I like both, it just depends. If I were to order a friet speciaal, I’d prefer it without the skin, but for friet mayo, it’s much better with the skin in my opinion :)
    It's just a different product.

    OK; So there is no drama.
    Me, a Belgian, will explain: fries with skin are a special snack, but you can't make good fries like that.
    Good fries do not have the potato skin.
    Also: frietsaus !? To taste fries, you take mayon(n)aise. Frietsaus is water!

    Ik weet niet wanneer ze met schil zijn gaan gebruiken, maar ik ken Ladage patat eigenlijk alleen zonder schil. Toen ik het bericht las was ik dan ook best verbaasd. Misschien een reclamestunt?

    I filed a complaint last year with them, of course they came back to me with the more tasty / environment arguments and yes even with the skin on they are still really good but different. I think they should have both options and have the public decide :) But I still prefer the ones without skin so I'll visit Carlo next Tuesdays Mart ( In Rotterdam we call the marketplace the Mart).

    I prefer boiled or baked potatoes with skin, but fries without skin. In practice this means that I have to compromise a lot. Many snackbars that make fresh fries use un-skinned potatoes. Most snackbars use 'fabrieksfriet' that are mass produced, processed fries without skin. I generally prefer fresh fries, but un-skinned ones many times have too much darkish almost bitter flavour added because of the skin, which I not always enjoy. So, in practice it is a tie for me.

    As a side comment to the subject of the video, one of my favorite "appetizers" here in the United States is potato skins! Half a potato that is fried but has the most of the "meat" scooped out. Delicious! Of course, much of the deliciousness could be from the cheese, sour cream, chives and bacon that the potato innards have been replaced with, but the crispy fried potato skin by itself is also very very tasty.

    Skin always. So much better, every time. Don't worry about the consistency. It's just a matter of more better or less better.

    The only way to eat a brammetje for me is no skin with Mayo, peanut sauce and onions.
    Have you tried that before? What’s your thoughts?

    Ive had both a lot (also live in the Netherlands). If I can get good fries with skins that are fluffy inside, thats good. But there are so many bad/mediocre places where the center of the fry is kinda dry and not fluffy. Even had some of those with skin on. So I will just say Good fries with skin > good fries without skin > all the fries fried poorly.

    I believe the snack bar where we would go to eat our family's potato farm frites would completely skin the potatoes. So my preference is that but it might just be sentimental.
    "... with fritesaus as God intended" is an epic phrase. I may put it after my name like "Taylor's Version"

    I don't get the obsession people in Rotterdam have with Bram Ladage. I find their fries uneatable. It's baked in the wrong oil. Fries are best baked in solid fat like oxwhite or tallow. They do that in Belgium. That's the best tasting and also very unhealthy, but who gives a crap. After that you could bake them in liquid fat (or frying fat) like they do in the average Dutch snackbar. That also tastes well (not as good as a Belgian frietkot) and is a little healthier. Then you could bake them in frying oil (like sunflower oil, arachide olie / peanut oil or rapeseed oil). That's the most healthy, but also tastes like nothing.

    I like to eat them with skin. I like the taste, but also the idea that less of the potato is wasted. And I would actually like the inconsistency through the year. It gives character if you can experience the potatoes in winter are slightly different from those in summer.

    Without for me. The skin adds a sweetnes I dont really like. But! Their fries! So always good.

    when done properly fries with skin are just as good.
    Edit: to give a bit more reference. BBQ potatoes with a nice garlic butter can be eaten just with the skin on too.

    I'm a huge fan of on skin... but it matters if the fries are freshly cut. In Manneken Pis it's clear they don't cut their own and I don't like the skin on there as much. They even forgot to give me the skin fries one time. So annoying.
    And I really like these videos more than your main channel... they feel like the skin on fries.

    Besides personal preference, the skin is often left on to get some taste because they use the wrong potato and the wrong fat. With Bintjes in beef tallow no one thought of leaving the skin on. The darker the better looking I don't agree with either.

      Next time you make mash, do not peal the taters. And then grate the taters before cooking. It is more work but is tastier, in particular with that tougher skinned potatoes. Again more work than with the tougher skinned...

    The problem I have with leaving the skin on is that the highest concentrations of solanine are found in and directly under the skin. Normally the amounts are not worth worrying about unless the potato has been exposed to light long enough to turn green, in which case the concentration rises significantly. With peeling it will be removed, without peeling and fried, the color isn't visible anymore, but the poison is still there.

    Rotterdam is de beste stad van Nederland, want ik woon daar ! Gewoon normale friet uit de frituur bij de snackbar is de Bram Ladage is de beste, maar ik hou van dunne friet, niet zo dik. Met Mayo en uien en pindasaus en curry.
