    Bearded's Blaand Recipe
    1 gallon (4L) Whole Milk
    4oz(150ml) fresh squeezed lemon juice (6 lemons)
    3/4 pounds(340g) White sugar
    1/4tsp Lalvin 71B Yeast - amzn.to/2ZHcbKz
    6 Lactase Tablets - amzn.to/3A4TdtZ
    1. Heat milk to 210F(99C), then turn OFF heat and add lemon juice. Stir gently to combine, then allow the mixture to sit for 15 minutes.
    2. Strain the curd and save the whey, then cool the whey to room temperature. Once cool, grind up the lactase enzyme tablets and add them to the whey. Allow it to sit for 30 minutes.
    3. Add sugar, and dissolve completely in the whey, then pour into your fermenter and add the yeast.
    4. Ferment for 3-5 days and enjoy sparkling, or allow it to settle and clear for a month, then siphon the blaand into bottles and store for up to 1 year.

      Hey dude! I got my Blaand going and the taste so far is awesome. It's amazing that a drink from fermented milk has a floral and fruity notes. I just had this brain fart. Could you make Chocolate Blaand?!?!?! What would happen if I add cacao to the milk and add the lemon juice to create the whey. After seperating the curds adding sugar to the whey and let it ferment. Would I get chocolate Blaand?
      I fear the cacao will attach to the curds and not mix in with the whey. What do you think???

      @@arghapirate2427 I've made flavored blaand - and the best approach is to wait until you have collected the whey and then add cocoa nibs or even chocolate malt (barley). Adding cocoa means that you are adding powder that will not dissolve and when you try to clear the wine you are removing much of the flavor notes. Roasted nibs expel flavor notes because the water and then the alcohol are solvents. Not sure why the solvents don't really extract flavor from the cocoa , except that US cocoa is typically pretty awful. Chocolate malt is very roasted malted barley. It's so roasted that it has no sugars that can be fermented but it tastes incredibly like chocolate.

      @@lagerstromr I don't think so. Mine didn't taste like cheese at all, so I don't think it needs it. But I'll let it age and clear, taste it and see if it needs some wood aging.

    Hey Bearded and bored. I recently came across your channel and have watched a dozen or so episodes, and I wanted to thank you for furthering my interest in brewing and experimenting in this hobby.     Early in my mead makin career I made a blaand once before with whey I squeeze from 4lbs of yogurt. Made 1qt batch. Really was delicious. Now I can make cheese and blaand in a gallon. So excited. Also ty for the chance to win a aging kit

    About twenty years ago I put a half gallon of whole milk into a carboy with champagne yeast, after a couple weeks I had a jug of what looked like yogurt and clear yellow pee under it. My dad threw it away before I could try it. Thanks for the video

    I have purchased wood from Ken. Great way way to experiment. Aged my spirit on toasted chestnut and amburana wood and then blended both 50/50. Wow! Tasted great!

    We make yogurt with our Instantpot and I always felt bad throwing out they whey. Thanks to you I now don’t have to feel guilty anymore.

    Hypothetically you should makde vodka from that. Dairy distillery in Ontario Canada has a Vodcow they make from lactose. Its interesting.

      @@BeardedBored Nice! The distillery gets the waste lactos from milk production and processing.. and then ferments it and make VodCow (Almonte Ontario Canada.. can get it at lcbo here). Its interesting.. they go into the tails a bit to get some of the character from the lactose.. and it comes through. I'm sure it will be tasty if you do it. Maybe you can get waste from dairy production in your area rather that starting with milk?

    You are one funny bastard. That was hilarious. I'm interested in it being distilled also. I made cheese once with lemon juice. I found it I bit to citrusy as a cheese. But I could see it as a spirit.

    OMG, this is awesome. I can't tell you how often I wonder if something could be fermented to get alcohol.

    So glad you made this video. I have been researching high and low for techniques on how to utilize milk in my fermented beverages - you'd think I would have also thought of using lactaid pills what with me having a lactose intolerant wife...but no. Can't wait to try this out on a future mead experiment.

    You had me worried. Our Scottish ancestors consumed a lot of things that sounded very unappetizing to me. Glad it turned out do good.
    Makes me wish there was a dairy farm near by, I miss that part of my youth. Fresh milk from the farm, homemade butter, etcetera.
