Can I ask . Why do you twist the crossover wires . Is it to stop interference

There will be some noise rejection yes but mainly for neatness

Would it have been too difficult to fix a tap when you wound the coil for the series/shunt part?

No. In fact I'm experimenting with this. Making an air core version of the original auto transformer design.
