It also gives an even distribution of butter over the dough. Spread the butter on the dough first, then mix the sugar and cinnamon in a bowl before sprinkling all over the dough. The buttered dough helps hold the sugar and cinnamon in place too.

While the exterior was as crisp as you would expect from puff pastry, the center was gummy. Maybe the apples released too much moisture as they baked. A disappointing result to say the least.
I was wondering about this! My MIL made apple strudel by hand and always sprinkled plain sugar cookie crumbs onto the dough (instead of puff pastry) before layering the apples to absorb excess moisture. Otherwise, they would be mushy inside.

They do look delicious though! I used to do something similar with the leftover pie dough when I made homemade pies. Yummy!

You could have put the melted butter first. Made a mixture of cinnamon sugar and sprinkled that on top the melted butter to save extra steps.

Sounds like your pastry was too thick, or you didn’t bake them for long enough.
