I like how when the judges taste Soma's dish that they also bring up history and time because instant noodles also have that in a way.

he already knew he had to adjust it for the environment, but he was thinking about the best way to do it
Plus one area that a traditionalist like Nene never considered...the reason why Soba is traditionally a Summer dish.
This is the fatal mistake of underestimating Soma and his creative ideas.

I feel like Soma did this primarily so he could send a message: My skills are so spectacular that I can take instant yakisoba that you'd buy at the grocery store, and make a food from it so great that it outclasses even the masterpiece of the person whose specialty is soba.
I think that describes Souma’s entire time at Totsuki by this point. Hard work, experience, creativity, and simplicity triumph over flashy, excessive,, and complex. While everyone has always looked down on him for having such a humble background, it’s that humble background and the lessons that it taught him that make him such an excellent chef.

I do appreciate how polite Soma is, always calling his seniors senpai, even if he goes a bit far in my opinion in referring to professionals and adults in that way, that could be a bit arrogant.
I mean, in Japan, it is common to refer to alumni like that, which is why he calls them that way, just as everyone else does.

This is what I'd like to see whether it's represented in a food face-off or in an actual conflict: that the main protagonist has the ability to-- and especially the willingness to-- gleefully trample upon restrictive traditions like the obsolete garbage that it is.

Soba is a flavorless dish, I did and ate it in Japan, it is amazing how to do it but it’s not tasty u,u go get udon, that’s much better
It’s funny you say that because the whole reason the girl winds up losing is that the traditional soba she makes is so mellow in flavor that the temperature and other dishes presented earlier ruin it.
