I also have a ys640 and I bought a small wire fire basket for an off set smoker and place it inside, next to the fire box. I first light a small fire with chunks and smoke the meat for an hour or two l, then start my Yoder and start pellet cooking. My briskets come tasting like they were cook in an offset. I also place a water pan on the lower rack and the brisket on the top rack for a heat barrier.
I 100% agree on using quality pellets! Knotty Wood are great, but sometimes the plum pellets are hard to find. After watching your vid on pellets I tried Bear Mountain. I'm really enjoying the Bear Mountain pellets. They don't burn as fast as the cheaper brands and you get a nice consistent burn with stable temps. In my grill they seem to produce less ash as well.

Knotty Wood Pellets is the company that makes the almond pellets along with plum pellets. I have been testing both types and am happy with the smoke flavor. Seems to be a really good company too. Been using Bear Mountain for a little over a year, super happy with their results. Another thing that can help get more smoke is not preheating the grill. I know, sacrilege, but that big dump of white smoke at the beginning doesn't last that long and mellows out on look cooks like a pork butt. Tip #6 is crucial. Don't understand paying for the best equipment and good meat to just ruin it all with pointless rubs. Salt, pepper and garlic powder. Carry on..

These are some valuable tips, well made video.. However, I am not sure about #6. I once posed the question to Meathead, he said since there is very little smoke penetration into the meat, the fine grains of spices will hold into the smoke, and result into a smokier flavor. This could be a video experiment for you, smoke ribs both ways side by side, and see which tastes smokier. Another one is to smoke in two stages. Smoke a brisket part of the way, refrigerate and continue on another day just like Black's BBQ. You may already have this in mind.

I’m of the opinion that it doesn’t effect smoke penetration, but more so you taste the rub more than the smoke flavor. One of those things like “why did you just cook it for multiple hours in smoke to not get full smoke flavor.”That said.. if you like the taste of the rub than who cares, it’s your food, so make what you enjoy!
@@ShredGarage Smoke is a flavoring, and you are absolutely correct, one flavoring can cover or minimize the flavor of another just like in any other cooking. A good test is to apply the same weight of garlic on two ribs for instance, one getting garlic powder, the other coarse granulated garlic.
A couple of things. As far as rub, you could get it on there and let it soak in, wipe off and re-apply lighter when it's time to cook. I believe beef should stand on its own, only with things that enhance beef flavor; salt, pepper, maybe garlic and perhaps a touch of rosemary. Poultry, well, poultry seasoning has been popular for decades for a reason, but you can do a lot more. Pork - you can go crazy on, make it hot, sweet, spicy; go ahead and use some stuff with sugar content, maybe some citrus or pineapple; oriental, latin, whatever, have a ball. Here's one: quit using binders. I've never seen the need for one and never once had the rub fall off. 40 years of not using it. It dilutes where the smoke gets to, absorbs a lot if it itself, and acts as a smoke shield. Especially oil-based ones; a shield. Mayo comes to mind; a colloidal suspension of chemically rotted eggs and oil! Water based to me would be better; wet meat absorbs smoke, right? But come on: a"I use mustard." b"I don't like that taste on meat." a"Well, you can't taste it." b"Well why in the heck did you put it on there then???" And unless you use a very very thin coat, yes, you can taste it!!! That should get some reaction!
Wet wood chips don’t burn as clean and have a different flavor. I suggest you try chunks for a BGE and not get them wet. Many years ago I used wet chips because I had an electric drum smoker with lava rocks. I learned it had better taste without being wet. Hope this helps. 🍻

Those tips do help as I do most with all cooks especially the smoke tube. But you will never get the #moresmoke flavor with a pellet pooper like you will with a stick burner in my opinion. I have used both for many years. The major advantage of a #pelletgrill is set it & forget it... mostly.
You will never replace an offset with a pellet, I don’t care what these new ones claim lol. Love my offset, but love my free time as well. I want to be able to make the best smoked food on a pellet if I choose to use that though. 🍻
On a Kamado it’s a bit different since it doesn’t have nearly as much air flow. Your meat just sits in a cloud of dirty smoke with little moving air. A piece on top which generates a little extra smoke won’t hurt, but I wouldn’t want a ton of dirty smoke in it. 🍻

Try using Pecan, it’s a nice flavor that has smoke, but much more. I haven’t tried them yet, but I hear good things. 🍻

Best way I found was to sell my yoder and get camp chef woodwind pro. Not near the quality build, but actually gives smoke flavor.

Have you tried using wet wood chips in the metal tube similar to adding soaked wood chips on a big green egg? #pelletgrill #moresmoke

Start at 165 super smoke for an hour or two. Step it up to 225 and manage internal temp and possibly raise to higher temp to finish.
Can get more smoke than that with a few of these extra steps. 🍻
