A novel, yet super simple way to use zucchini. A colorful addition to a summer buffet spread. Very nice indeed!

It took me just a minute to connect the ingredients, but I have been making this fundamental dressing for years. I made it up myself. And thought it was quite good. I use ground coriander, salt, black pepper, sugar, olive oil, and a red wine vinegar. I’ve always used it on coleslaw. but, the lemon, pinenuts and zucchini, is something I will be trying soon. Love your channel!

Interesting salad. One veggie we have an excess of, is courgette, but they end up so big. Love to try this

Nice to see a vegetarian recipe! I know traditional French cuisine is very meat-based (I am reminded whenever I’m in France trying to explain that I’m a vegetarian…which is often as I live next door in Switzerland). For our planet we all need to eat meat less. I would love to see all your amazing expertise as a chef directed to sharing satisfying and delicious French vegetarian food more often so that I and other veggies can enjoy them😊

I will have to adjust the lemon.
Crushed roasted pine nuts go well.
    Rather surprising.

He did crack the coriander seeds slightly. Grinding to a powder would up the brightness.

I'm not a big fan of zucchini either. I ate it all the time when I was a kid. My mom would slightly boil it until it was a bit soft, and that was it. Maybe if she made it this way sometimes, I would appreciate it more. All that aside, I think I'd use cucumbers and skip the blanching. The spices and technique seem good for that, too.
