I remember the first time having a spring roll in Saigon when docking with the cruise ship I worked on I couldn’t stop thinking about that dip sauce and what what in it 😅 I had to being with me a portion back to the ship to my NZ colleague who had to work that day! Love the fresh herbs too!

Pho and banh mi get a lot of press, but at home, we eat a ton of fresh and fried spring rolls...everyone loves the fried ones growing up. The fresh version comes in a million different varieties using all kinds of protein from pork, shrimp, fried/baked fish, buttered beef/shrimp/seafood/chicken, etc. Vietnamese folks do eat the fried ones wrapped with a ton of veggies and herbs and dipped in nuoc mam (nuoc cham is the dipping sauce vs nuoc mam which just means fish sauce in general). The food in general is very interactive and very customizable to your own taste, which is what makes it unique (along with the platters of fresh herbs and veggies used and all the wrapping and all the dipping sauces and...LOL). I'm so surprised you both can eat fish mint...a lot of Vietnamese people don't like it (it's that heart-shaped leaf herb that has a fishy aroma/flavor to it).
Another name for the funny herb you were trying to describe with heart-shaped leaves is called fish mint....aptly named because it has a fishy smell to it.
Vietnamese inherited banh mi (baguettes) from the French when they were their colony but the baguette has been customised over the years to become a Vietnamese dish. The baguette is originated from the French bread loaf.
Because Vietnam has a tropical climate, it is easy to sweat and lose a lot of water in the body, so it is necessary to add a lot of fresh vegetables to have all the nutrients needed to work for a long day and consume the energy that has been lost.
Hi, I heard you mentioned about summer roll and deep fried spring rolls, those are incorrect. Summer roll should be call Spring roll and the deep fried spring rolls are actually egg rolls. Those two rolls you can eat any season.
Egg roll if you’re American, but I’m British so it’s called a spring roll haha. Summer roll is just because it’s lighter and fresher with the rice paper rather than the heavier spring roll. That’s how we call it in UK
short stools need long bermuda shorts like gary had on. can't have american marines "short shorts", we used to say they play tennis under the table. gosh, VNemesr children are easily amused and got teased too much. i've never sat on plastic stools before, teak only.

That’s true! But the individual chillis are sometimes hotter in Vietnam but overall the cuisine is more spicy in Thailand yes
