The castle from the port Is about a 3 minute drive but I would recommend walking as it is within walking distance. There is one shopping center as soon as you get off the cruise but there are others within walking distance (Dağ, Şöförler Sk., 09400 Kuşadası/Aydın, Türkiye and Camikebir, Kışla Sk., 09400 Kuşadası/Aydın, Türkiye). I did not purchase anything at either of them, I just walked around so I can't say which one is better than the other.
I believe it was around 5 lira, I would suggest bringing your own toilet paper or wipes just in case. I honestly can't remember how much the water bottle was but there are a few convince stores right off the port!
Fair question, I moved fairly quickly and tried not to stay at one place for too long. It helps to have a list of places you want to go and map them out accordingly!

Yes! As soon as you exit the shopping center there is a fish market and there’s a coffee spot right next to it!
