If you havent tried it before soak them in a vinegar sugar solution then also boil them in a new water solution that has some vinegar and sugar, it adds a lot of flavour and makes them crisp up nice
As a french, you need to know that you must also have "french fries potatos", the Bintje one is the better. We have multiple way to do french fries, depend of what type of potatos you have and depend of what you want at the end :3

If thats too much work try microwaving them with a bit of oil after the water bath then fry and bake them. You can even leave them on the rack you put them on from the fry. You'll get a result pretty close to that. You dont need to chill them at any point but resting letting it while you prep the next step is good.

I always do the double fry. But this is a good way to pre make them and store them in the freezer until you want to make them.

after the first fry, u can add the fries into a bowl and add 2-3 tablespoons of corn and potato starch for even more crunch on those fries.
