Welcome back to the kitchen, friends! In today's Glen and Friends Cooking video, we're whipping up a delicious Ginger Spice Mini Bundt Cake for two. This recipe is a revisit from our 2016 video, but with a simplified method for quick and easy baking. Follow along as we mix the perfect blend of spices and incorporate chunks of candy ginger for that extra kick of flavour. And don't forget, you can always add a glaze for a finishing touch! Ingredients:
For the Cakes:
75 mL (1/3 cup) all-purpose flour
1 mL (¼ tsp) baking powder
.5 mL (1/8 tsp) baking soda
.5 mL (1/8 tsp) salt
pinch of pepper
1 mL (¼ tsp) dry ground ginger
1 mL (¼ tsp) ground cinnamon
.5 mL (1/8 tsp) allspice
45 mL (3 Tbsp) candied ginger, chopped
45 mL (3 Tbsp) sugar
30 mL (2 Tbsp) butter, softened
1 egg
1 ½ Tbsp yogourt
30 mL (2 Tbsp) cooking molasses
For the Glaze:
60 mL (¼ cup) icing sugar
5 mL (1 tsp) bourbon
Method:
Preheat oven to 190ºC (375ºF)
Grease and flour two 1 cup mini Bundt pans.
In another bowl whisk together flour, baking powder, baking soda, pepper, ground ginger, cinnamon, allspice, salt, and candied ginger.
In another bowl whisk together sugar, butter, molasses, and egg.
Then whisk the flour mixture into the butter mixture.
Divide into prepared Bundt pans.
Bake for 15-20 minutes.
Let cool for 10-15 minutes before removing cakes from pans.
For the glaze mix together icing sugar and bourbon; pour over cakes just before serving.

As the owner of multiple mini bundt pans, and hardly any recipes for them, this is almost heaven. The fact that it's a ginger spice cake with molasses pushes it the rest of the way!
I have a somewhat similar recipe I got from my grandmother, and it is at least one generation older. It is baked in a loaf pan, sliced in half and then a filling of butter and powdered sugar put in the middle. Absolutely my favourite cake, but it contains all of the sugar, syrup and butter.
I buy candied Ginger and eat it instead of candy bars. Yes I like it that much. I have to try this cake.

Thank you for this! This is a great little baseline recipe I can use to mix-n-match cake flavors with; one for me and one to gift to a family member, a friend, or a neighbor ... or even just to freeze one for later.
Yea, another cake for two. So happy, I make a small cake every time I loose 20 pounds. Yea for small cakes, they are great mini rewards on a weight loss journey.
I like this topping on gingerbread/cake: 2 tablespoons each of brown sugar, butter and bourbon in a 2-cup container. Microwave until it is boiling like crazy, about 1 minute. Pour over the cake. Yum.
I love a good spice cake and also candied ginger so definitely trying this one!
The idea of pepper in it reminds me that I sometimes put some freshly ground pepper in my tea (large batch - 2L of fresh brew, to be mixed with soda, juice, and ice).

Glaze made with icing sugar and the syrup from stem ginger. Bam!
When I have large add ins (nuts, dried fruit, chocolate chips), et cetera, I only add them after the batter is fully mixed.
I absolutely love the baking/cakes episodes. Unfortunately, I am allergic to wheat and will never taste them.
Have you tried rice and potato mix, or almond coconut mix? I have also made a garbanzo bean banana bread, and black bean brownies. I always avoid corn, but during my lupus flares have had allergic reactions to all grains except rice. One of my foster sisters has celiac, but also can't have eggs or tomatoes. Mom always had rice and potatoes for us.
Robert, just go on RUclips for baking with alternate flour types. There is so much information out there. One thing I learned was that different flours need different amounts of liquid.
I don't know what country you're in. Here in Australia, I can make cakes with gluten free flour and not have to adjust the recipe at all.
Will try this in a 6 inch standard cake pan that fits in the convection oven/air fryer. Will reduce the baking temp by 15F. Thanks!

Oh, this looks lovely! I have an old recipe for a moist, dense gingerbread loaf that seems similar, and we love it. I have to try making these little cakes for Sunday dinner when my mom and brother come to our house. They’d enjoy that; mom is particularly fond of candied ginger.❤️ I wonder if this would do well with a bit of warm lemon sauce poured over?

With any fruit cake, adding fruit to flour before wet ingredients helps it from falling to the bottom

Not ‘readily’ available, in that every grocery store carries it. But you can find it in a few stores

When you mentioned revisiting a recipe, have you even considered reimagining a recipe from the old cookbooks which you ended up not liking for some reason, or perhaps retrying something in a different way if on the first attempt you maybe made an assumption which was for the worse?
Recipe on screen calls for fresh grated ginger; recipe in description calls for chopped candied ginger.
You could use either - I mistakenly put the older recipe on screen.
