    Chicken Angara gets its name from the smoky aroma and flavour of the gravy that makes it unique from other chicken gravy curries. Chicken Angara is lightly spiced and the trick to the smoky flavour is the infusion of coal smoke in the marinade and curry by pouring ghee on a burning piece of charcoal.

    Ingredients for making Chicken Angara Recipe

    Coriander Seeds - 3 Tbsp
    Cumin - 1 tsp
    Fenugreek Leaves - 1 tsp
    Black pepper - 1 tsp
    Fennel Seeds - 1/2 tsp
    Cloves - 5
    Black Cardamom - 2
    Mace - 1
    Green Cardamom - 5

    Mustard Oil - 1/2 cup
    Bay leaf - 2
    Whole red chillies - 4
    Onions slices - 5
    Ginger garlic paste - 2 tbsp
    Tomato puree of - 3 large tomatoes
    Turmeric powder - 1/2 tsp
    Kashmiri red chilli powder - 3/4 tsp
    Degi mirch powder - 3/4 tsp
    Coriander powder - 2 tsp
    Salt - to taste
    Curd - 250 gms
    Chicken - 1 kg
    Hot water - as required
    Green chillies - 4
    Coriander leaves - a few
    Ginger julienne - for garnish
    Coal - for smoky flavour
    Desi ghee - 1 tsp
