There are have been various hints that Doffy wanted Op Op fruit for the Personality exchange so that he can become Imu ( who either has control over the creation of DF or straight up making them) Something Doffy would consider the ultimate power.Either way the Immortality Surgery is propably a City of Gold case. Gold is the treasure of Knowlegde not the precious material. Thus the Immortality might suggest a release of some entrapment either the water restriction or something that gets you of the Hook of the Devil fruit.
