its from a loin, its the most tender part of the animal and there come no risks of infection if the meat is fresh enough. But do not do it with pork tenderloin because pigs ussually are infected with parasytes but you can cook it like medium or even medium rare if you like but only the loin part.

I have eaten Yuk-hoe /yuu-keh/ in a Korean resto before and it wasn't unpleasant or anything. It was quite delicious. But would I order it again? No.
