Frodojack You don't have to play fast to play well. Slow and melodic guitar work has a place too (and it's actually more enjoyable than shredding in my opinion). Don't be discouraged by your playing speed and just try to have some fun :)
When I think of a crazy Dream Theater solo, I think of the solo from In the Presence of Enemies pt II. Galneryus has been mentioned, and in particular, the solo from Destiny. The solos from Destiny- bass, keys, guitar, ALL of them- are nuts. You should definitely try the solo from Destiny. Keyboard solos have also been mentioned. I'd like to propose the third from Elysium, by Stratovarius. It's a well loved solo, and I think it would translate well to guitar. And while we're on Elysium, the third guitar solo is pretty freakin' awesome, as well.

It's my favourite album and I've been trying to learn how to play all the guitar parts for years and still have the hardest time with This Dying Soul's outro and these solo/unison sections from In The Name of God. Well, that´s a personal situation of yours(which is really sad tbh), still, I believe that you would be able to achieve those goals if you properly aim for them and work hard! The only real limitation in music is your mind and Jason Becker is the living proof of that!

Dream Theater have a lot of talent and many great songs. A mix of heavy and light. They are the ones who got me into Prog Metal. "Train of Thought" is a good album to introduce you to them.
Then there is Systematic Chaos, with probably my favorite DT song, "In the Presence of Enemies" (its a two parter on the album) Metropolis Pt 1, Pull me Under, Octavarium... I could go on and on. If you enjoy music played well/with talent, and/or if you play an instrument, Dream Theater can provide some interesting songs.
