I always enjoy listening to Ignazio speak; his voice and his accent get me all the time. It's kind of funny when he demonstrates cooking and says "then you do like this...and then you cook."
That young man can do anything he sets his mind to. I am sure that he is a very good chef. It never ceases to amaze me, just how much he can do at such a young age.
I am making Ignazio's chicken marsala right now. I coated the chicken in bread flour. I used olive oil and marsala wine with some cinnamon. I watched this video a few times. Love how he says "and then you cook."

I use that word too since I`m Sicilian like Ignazio and Piero,but from different town,so` everybody in the family here and in Italy use it,just like you grand mother,a lot of People use that word in Italy,its like we said here, "and get lost",same idea no offence intended, its just a slur .
