  • Sheet pan Chicken Fajitas
    Seasoning
    2.5 tsp chili powder
    2 tsp ground cumin
    2 tsp dried oregano
    1.5tsp smoked paprika( or regular paprika)
    1.5 tsp ground coriander
    1 tsp onion powder
    1tsp garlic powder
    *( you can also use 3 Tbsp store bought fajitas seasoning instead of the spices above )
    Salt and freshly ground black pepper
    2 pounds boneless,skinless chicken breasts, cut into thin strips
    3 bell peppers cut into strips( use the colours you like )
    2 onions, sliced ( red or yellow)
    3 cloves garlic, minced
    3 tablespoons olive oil
    ¼ cup chopped fresh cilantro for garnish
    2-3 Tbs of lime juice
    Combine the spices , minced garlic and olive oil together. Add to the chicken and mix well . Refrigerate for 2 hours or overnight to get stronger flavours. When ready to roast , preheat your oven at 425 Fahrenheit .Salt , pepper and oil the vegetables and place them on two sheet pans lined with baking paper(In a single layer ) . Top it with the chicken .Place into oven and roast for 20-25 minutes, or until the chicken is completely cooked.Sprinkle in with cilantro and add the lime juice. Give it a toss and serve with your favourite sides .
    I had avocados , sour cream , tortillas and pico de gallo.
