a couple of things to note: you can see at 0:46 that derren hasn't written anything down. there is a suspicious cut at 1:10, between when derren says "50p" and "have a look". you can tell something was cut out because before the man's wallet was open and he had the tenner out, afterwards the tenner is gone and his wallet is shut. also derren's left hand makes a very strange movement, almost as though he'd just handed something to the man and is moving his arm back to his side. I think there was a segment of about 10 seconds cut during which derren subtly wrote down the real amount behind his back (this is possible with certain trick envelopes and writing gimmicks), and then switched the envelope. he probably took it back, said somethnig along the lines of "remember, if what I've written in here is correct you win £100" and switched it while handing it back.
I've become infatuated with Derren Brown. His ability to read people and make their heads spin is amusing and entertaining, I thought of myself as someone of obscure knowledge which I use to the confuse and manipulate people slightly, but Derren is a very special individual with a high IQ, incredible memory and does it in a mind controlling way. I yearn for his far superior skills to use in the fun way that he does.
He took his wallet when he wasn't paying attention, counted the money, then put it back. And then he pretended like he was guessing the amount. That's how.
I think acetym's explanation is the likely one. Derren has himself admitted in interviews that he'll often disguise more conventional "tricks" (misdirection, etc.) as mind-reading, subliminal suggestion, and the like. I think the questions he asked were just misdirection.
