    EASY Sourdough Starter Method:
    1⁄2 cup flour (whole wheat or unbleached all-purpose)
    1/4-1/3 cup uncholorinated water
    Quart jar
    Small towel & rubber band
    To begin:
    Start the process by adding 1⁄2 cup whole wheat flour and 1⁄4 cup water to the jar. Stir thoroughly and cover with a towel and rubber band. Let sit for 24 hours at room temperature. (Try to keep it in an area of your house that is somewhat warm. Very cool rooms tend to slow the action of a starter.)
    The first feeding: After 24 hours, check the mixture for bubbles. If you see some, add 1⁄2 cup all-purpose flour and 1⁄4-1/3 cup water. If you don’t see bubbles, give it a stir and let sit 24 more hours.
    The second feeding: After 24 hours, check for bubbles again. If you still don’t see any, dump out the mixture and start over. If you do see bubbles, discard half of the starter, add 1⁄2 cup all-purpose flour and 1⁄4-1/3 cup water and stir thoroughly. Let sit 24 hours.
    The third feeding: Discard half of the starter, and feed with 1⁄2 cup all-purpose flour and 1⁄4 cup water, stirring thoroughly. Let sit 24 hours.
    Continue this routine until the starter is consistently bubbling and doubling in size within 8 hours of each feeding. At this point, you can store the starter in the refrigerator and feed it about once per week. When you plan to use the starter, pull it out of the refrigerator 24 hours in advance to feed it and allow it to warm up and grow.
    **Have chlorinated tap water? Simply set the water out in an uncovered container for
    24 hours before using it to feed your starter. This allows the chlorine to evaporate so it won’t kill the wild yeast.

      Any ideas as to why my starter smells horrible? Not sour like it should. I was on the third feed and I just couldn’t take the smell so I chucked it. It had bubbles but barely rose.

    This is spot on. People worry way too much about creating a starter. It just takes patience. It can also take a withstand a far amount of neglect. I keep two small peanut butter jars of starter (named Bart and Lisa) in my fridge. I feed them about every 3 months when I am not using them. Take them out, let it warm up, scoop some out, give it fresh flour and water. (I don't even measure it anymore). When I bake with them, I usually give them two or three feedings to really rev them up for a strong rise. Works fine.

      My friend always makes sourdough and when I asked about starters she said you have to be given a starter from someone else so I'm real happy to have found this because I knew that wasn't true

    I like the no fuss. I like the suggestion for using the discards. I like the fact that you use approximate measurements and aren't crazy about exacts. Watching some other chefs make sourdough looked daunting and like I could never repeat it. I thought to myself, SURELY there has to be a less crazy way to do this for the common folk out there (like me, and before modern technological and culinary advances) to make sourdough bread regularly! THANK YOU for this video!! I'm totally ready to begin now!! 😁

    Thank you for this video. Your book is equally informative and enjoyable. Day 2 and the starter is bubbly. I keep a quart jar of city tap water covered with a paper towel on my counter. It helps to keep some on-hand but now it’s essential for starter. Years ago, in my 20’s, I was given “Friendship Sourdough Starter” and regret letting it go bad. It would’ve been a little thread of additional connection with the woman who gave it to me and all the people I could have shared it with. When you get older you think about little things like this.

I love your good influence here on YT, and the many things there are to learn here (even though I'm old enough to be your mother). I might actually try this sourdough starter. I've been getting into making bread at home, but have looked at sourdough as too much work, etcetera. Now I'm intrigued to try. Thank you!

    Family and farms, big or small, go together like kids and chores. I grumbled over doing mine as a child but I learned how to work. Life is work! But it doesn’t have to be unpleasant. Now that I’m on the downhill side of my 60’s, I find that I’ve always found a sense of accomplishment in doing even the most tedious jobs. If it’s work of value then it’s work worth doing.

    I finally have a very active growing starter! So excited! I thought I killed it the other day when I accidentally used tap water (with Chlorine), but if just fed it the next day with spring water. It took about a week to grow well. Today I bake.

    Have your cookbook, made our sourdough starter from it. Dirt simple! When I get tired feeding it I just refrigerate it! No fail in Little Rock

    I always use the handle of my wooden spoon to stir my starter. I use the handle to stir the dough when I'm making bread too. It acts like a dough hook.

    I added a teaspoon of honey dissolved in water to my starter. It really helped things get going! Love your instructional videos, so informative and simple to follow.

      @@mariahhenderson1470 No, not at all! The honey is all "used up" in the yeast-growing process, so by the time it's baked into bread no honey flavor lingers.

    MANY years ago someone gave my sister an Amish friendship bread starter. She learned how they will keep in the freezer so instead of giving any away, she would freeze them. Plus it saved having to feed as often (which is nice considering they take 10 days).
    One time while visiting her I decided I wanted one so asked her for a cup. She wanted to be greedy! Claimed she didn’t have that many cups left her in freezer (she had at least 4 cups) & wanted me to wait & get some another time! I said “NEVER MIND!” Of course then she practically begged me to take one but I refused. However, she did send 2 cups of starter home with our mother who came home & fed both cups resulting in a bunch of it. After I got home I started doing some online research. I figured out how to start my own starter!
    Fast forward in time a little. Sister moved. Guess what died during the move? Yep her starter in her freezer. Guess who she had to ask for a starter? Yep, ME! Fast forward again. Sister moved again. Guess what died again? Guess who she had to ask again? 😁😂

      I doubt she’ll ever learn. We no longer speak to each other. When my dad passed away almost 9 years ago she got greedy so I had to take her to court twice. She learned I wasn’t gonna sit back & take it.

    I have always wanted to be someone who bakes her own bread. My nan was a
    bread baker and I don't remember her ever buying a loaf of bread. I
    have so many fond memories of that warm cozy bread smell.
    For
    about a while I have been curious about sourdough and making my own
    starter but it has always seemed sooo complicated. I finally am at that
    point in the quarantine where I have made up my mind to take the plunge,
    but there is an endless amount of information on the internet about
    sourdough bread and all of it seems to differ slightly. I was getting
    overwhelmed. I love that you make it seem so simple and easy .
    I am finally going to get started today and see what happens.

    I'm a messy cook/baker, too, lol. Never apologize! So many people don't cook or bake from scratch anymore, it's just crazy. Bonus: I've also had chooks get tangled up in feed bag string, poor baby. It was so tight it had cut into her toe. Made me feel terrible, but we cut off the string, put goop on her cut, and she recovered. Also: that kid making a fire in the stove with the propane torch, lol. That's totally my husband.

    Killed my first starter. Bought some unbleached flour and started some more last nite. There are a few bubbles tonite. So I added more flour and water and stirred it all up. It’s resting on top of my fridge. Can’t wait to try some bread !!

    I have used your method twice. First experience I didn’t know what to look for. I gave up an threw it away, 6 months later I know what to look for and my starter spilled out my quart jar day 3 🤣 very thankful for the thorough and videos about sourdough

    Made a batch from a different video and had to have a scale but I don’t. So I did equal parts of flour and water. Bad decision. It separated and all the liquid was on top and had turned brown. So I looked for a recipe without a scale and just made a new batch. Sitting it on my fridge so it’s a tad warmer. And so nobody decides to throw it away. Nevermind. Nobody here ever throws anything away lol. Thank you for the recipe !!

    When I first decided to try sourdough I fed daily for a week before I got discouraged. 3 days later when my King Arthur starter arrived, my own starter was booming. These days I bake about every 5 days and alternate between my two equally useful starters. The 10 days between uses they live in the fridge in small containers. When I remove from the back of the fridge I use some starter for my overnight levain to develop and use some of what is left to set up my next fresh batch of starter. Mine is made fresh each time using 1 part starter to 2 parts water and 2 parts flour. My stored starter is only about 125 grams total but is enough for most recipes. I leave my fresh batch next to the levain overnight so I can easily judge how active it has become while sitting. Without that fresh batch it would be hard to judge because my levain is usually full of soaked grains and raw sunflower seeds. The volume change on the levain is hard to see.

      Try a dough rising bucket for your rise, helps you see the rise since the bucket is straight sided and has markings.

      The problem for me was having about 1/4 cup of the flour/water/starter mix and 1/2 cup of soaked grain. Noticing a double of that 1/4 cup becomes tougher.

    Oh my goodness thank you!!!!! I attempted the sourdough starter in your cook book twice and it turned out like a hockey puck. I trashed the first one on day 3 and started another.

    Wild yeast also comes from the flour itself (from the grains)

    I tried to make seitan from flour and all that I ended up with was the beginning of sourdough starter. It's a win! P.S. You do not have to feed your starter every day!
