- The chalupa is a historically Mexican masa shape (chalupa means "small canoe") that looks like a log with a long depression along the top meant to house toppings. yes! mystery solved. This style of chalupa is typical of Estado de Mexico, there are versions from Puebla (fried) and Guerrero (more of a cup shape) that look a bit different but are equally authentic Mexican chalupas.
Yes, one is a beautiful traditional expression of cuisine and the other is what you need at 2 AM, after the bars and Mezcal you've drunk that night both want to close on you.🤣

The chalupa my mother used to get at this wonderful old Mexican restaurant in Memphis -- way before Pancho's -- was flat and round and pretty simple, as I recall. But Mr. Ortega had obviously Americanized his cooking to appeal to the medical students from the medical center across the street. But his restaurant looked to me just like any not fancy restaurant one might find in Oaxaca -- just a number of small tables and chairs in a very simple room with a cement floor. This was when I was a little girl, and I'm 71 now. I loved his beef enchiladas.

As long as you're seasoning it, the marks are fine!
I have never seen Chalupa made that way. Here in south Texas a Chalupa is a crispy fried corn tortilla usually toped with refried beans and cheese on top that is melted under a broiler. After that it toped shedded lettuce or guacamole.

A TexMex chalupa sounds real good right about now. Glad I wasn't the only one who thought about that style.

Taco Bell's chalupa reminds me more of a san antonio puffy taco

Taco Bell is just Mexican influenced American/stoner food the only thing Authentic is the color purple they use which is oddly the same color that Mexicans use to paint Houses when they immigrate to America.

You really shouldn't put music on a video where you're showing people how to do stuff. Firstly, you cannot pick music everyone will like. There will certainly be people, like me, who ABSOLUTELY HATE IT. Second, you make it hard for people to turn the sound down but still hear what you have to say. LEAVE THE MUSIC OUT! PLEASE! Bye. Thanks Dave! The burner that we used for the videos is a gas (butane) countertop stove, similar to a camping stove. Comal works well on it, but the use here was mainly for the video. We do see that electric/induction burners can work with a comal but conduct heat differently than a gas stove, sometimes causing the comal to warp.
