In England,, I can give some insight that the financial implications of being a second , third or fourth wife can be significant. Generally, wife number 1 is the legal wife if there is a valid legal marriage and she is protected financially for herself and any children in the event the marriage breakdowns.Wife number 2,3 and 4 may only legally have the rights of a cohabitee, which is significantly less and has left some women financially destitute. Women should educate themselves and understand the implications of polygamy in the laws of the country they live in.

invest in solar for electricity, grow your own food, raise chickens / livestock etc.

So you are saying that we should start a 2nd family and household when we are just able to look after one family. Look we shouldn't intentionally put ourselves in trouble. If you had two wives then you suddenly become broke then it's acceptable because you had no control over it but intentionally doing it is not acceptable.
The prophet was not always poor. He was the ruler of Medina and during war one fifth of the war booty used to go to the family of the prophet. And he used to give away lot of money. So we can't sure that he used take additional wife while he can barely feed his other wives. He may had no food at some times but not always.
