The writers' job was to do it in a believable way, and they did. It's the same logic with Lalo. The only slight difference is that some people think Lalo didn't get outsmarted in a believable way. I disagree. Lalo had flaws. One of them being that in moments of urgency and anger, he can be rash and make unforced errors.

Not only does Lalo act the exact opposite of Hector by feigning respect and politeness at Los Pollos, in his first scene we see him passionately cooking at Hector's restaurant so his compliments on the chicken are probably sincere.

Tell me again, is so fantastic. Saul is the type of guy who makes up (and practices in his head) the kind of story that sounds convincing enough the first time. Lalo was hands down the Salamanca "heir". The creme de la creme of that family of Psychotic badasses. Though you gotta wonder what Hector was like in his prime.
Héctor was a muscle. And smart enough to be boss of his own family and a hand to Eladio. But he was always de dumber of the trío Eladio, bolsa, Salamanca. I see it like the god father. Something like vito tessio and clemenza. Héctor would be the clemenzza of the group street smart and muscle. Lalo is even steps up to Eladio and a step over Gus because hes crazier and has less restraint. Gus is limited by his fazade.
And yet he’s inadvertently the downfall of the entire cartel and eventually, Gus. Without him there’s no Saul Goodman and without Saul there’s no Heisenberg.

This character is the most vibrant of all. He shows up and is going toe to toe with fan favorites who had a whole show to win us over. He pops up with his boss music and singing in the kitchen and he grabs everyone’s attention.
Yeah it’s such authentic character building. He really is the ultimate psychopath and they did an incredible job with his dialogue and mannerisms. Chilling performance.

Basically, Lalo had gifted Mateo a dental procedure (presumably with a dentist that Lalo knew well) and after the procedure, the dentist removed Lalo’s teeth records and replaced them with Mateo’s. This is a contingency plan for if Lalo ever needed to fake his death. Once he is presumed death after the raid on the Salamanca house at the end of season 5, all he needs to do is make sure that Mateo is also dead, as Mateo is the only one that could tie Lalo to the whole record-switching ordeal. The final shot of Mateo after shaving is just for the audience to put together that Mateo looks like Lalo and Lalo probably leveraged that in some way to aid with his death faking.
He only lost because Breaking Bad aired first.
