    Do you preheat the baking sheets before putting the bread on it? Also do you spray them before putting the hotel pan over?

      He spray water and let down at 200 for 20 min IMO

    How do you usually bake in the Rofco oven? initial temperature etc? I follow you and admire you a lot!

      Hi Massimo Thank you! 260 while loading and down to 200 after steam added for 20min. Release steam and another 20min.

    What is the bread cold proofing in? Is that a refrigerator? How many loaves can you overnight proof. This seems to be my current bottleneck
