Do you preheat the baking sheets before putting the bread on it? Also do you spray them before putting the hotel pan over?

He spray water and let down at 200 for 20 min IMO
How do you usually bake in the Rofco oven? initial temperature etc? I follow you and admire you a lot!
Hi Massimo Thank you! 260 while loading and down to 200 after steam added for 20min. Release steam and another 20min.

What settings are you using in convection oven? Temperature and steam level?
220c and manual steam :-)
What breadlame are you using?

The clothe helps dry out the skin for you to get a better score correct?
Helps for the dough to release easier:-)
But these bannetons are good for drying out the skin 👍
